stuffed bell pepper recommendations?

What do you put in yours? I have my mom's recipe but its pretty plain - I was wondering what you put in it to make it more exciting :)

  • Well, what's in your mom's recipe?  I usually do some sort of spanish rice with veggie ground beef in it.  When you say exciting...do you mean spicier or something way out there?  Google some recipes I bet there's something really interesting out there!   ;o)

    My mom's recipe has like beef, canned tomatoes, rice, and like salt, pepper and garlic (from what I remember). Oh, and cheese

    I think I need to add something spicy to it maybe. The recipe seems so simple, but maybe that's why its good.

  • I use my turkey taco mixture - basically I sautee a small onion in butter, then add 1 pack of ground turkey breast, taco seasoning, and a can of whatever beans I have (black, red or white) - then I top with shredded cheddar. YUM.
  • I'm on a ridiculous low fat diet as a result of my gallstones, for the rest of pg.  We made stuffed peppers and subbed ground turkey for ground beef since it is leaner.  It came out pretty good.  The other ingredients were pretty much on par with what pp's have listed.

  • Ground turkey, rice, diced onions, tomato paste, cilantro, salt, pepper, fresh minced garlic, and if I'm feeling special, black beans or corn.  Top with a slice of mozzarella!
  • Down here we do them with breadcrumbs and shrimp/crabmeat instead of ground beef and rice w/ that red sauce.  I don't have a recipe on me, but they are SO MUCH BETTER than the rice kind.

    I don't normally follow a recipe. Just brown some turkey or ground beef, add some onion, maybe mushrooms, canned tomatoes, garlic, salt & pep, cheese and bake!
