Yes, I'm a One-Note Nancy today. Cookies, cookies, cookies.
Anyway, we have a ridiculous amount of peanut butter in the pantry, including some that is about to expire, so I'd like to use it up. Anyone got an awesome cookie recipe?

Not cookies, but what about cupcakes with peanut butter frosting, and maybe a drizzle of jelly?

4 ounces (1/2 of an 8 ounce package) cream cheese (room temperature)
1/3 cup peanut butter
1 1/2 cups powdered sugar
1 teaspoon vanilla extract (I would use less next time. I thought it was too strong).
In a medium bowl, beat the cream cheese and peanut butter with an electric mixer at medium speed until just blended and smooth. Gradually add powdered sugar, beating until smooth. Beat in vanilla until just blended. Makes 1 cup (enough to frost 12 cupcakes or 1 cake layer).
