Easy dinner idea for LO's-complete with veggies

Tonight I made Stouffers Lasagna and 10 minutes before it was done I picked up a couple of the layers and put in fresh spinach leaves (the kind in the bag in the salad aisle).  LO ate a huge helping of lasagna and a ton of the spinach because it was disguised by the marinara.  Thought I'd share for those of you who have a picky eater like I do!

  • Good idea! I have made stuffed shells and put chopped spinach in there too and DD just eats it up!

  • Watch out for that frozen lasagna. A lot of them have tons of sugar (why people like them so much).

    My favorite go-to meal is this -

     I bought two pounds of grass fed ground beef (no hormones or antibiotics), added bread crumbs, tiny diced steamed carrot, and two big fat eggs. I made meatballs and baked them off at a low temp (so they didn't turn out crispy). I froze them all. 

    Etta LOVES them! One or two of those, diced tomato or, in this season, diced canned organic, salt free tomatoes and maybe a slice or bread or, when she is done, diced pear.

    Those meatballs sound yummy!  I'm adding those to my list.  I know the frozen lasagna isn't the best, but it was good in a pinch after work and I managed to trick LO into eating his veggies.  I made steamed brocoli and he ate some of that also!  I wish my LO would eat pears like your LO-he won't eat fruit other than bananas unless it's pureed :(.
