Appetizer needed for Holiday party

DH's holiday work party is in two weeks. Its going to be a two hour drive to get there and it's on a boat. They are asking everyone to bring an appetizer. What can I bring that is easily transportable but yummy?

  • Will you be able to heat up the appetizer once you get there, like in chaffing dishes?  How about a crockpot of meatballs?  Or a hot chicken dip?  My family loves 7 layer dip, also.

  • Thats the thing, it's on a boat, and the company is a fairly large size so I dont believe they will be providing anything to keep things warm. And since we have to travel soo far, I might just have to find a store near by and pick something up unless I can come up with something good to take that travels well.

  • I love doing phyllo pastry appetizers! Super easy one is to layer some phyllo dough (buy frozen and thaw in the fridge) with butter between each layer. Once you have about 7 sheets, spread some creamy cheese and fruit. Then roll up, bake until golden. They are good at room temp and travel well if you take care to package them. Combinations I love are blue cheese, pear and walnut. Chevre and cranberry. Cream cheese and mango chutney with some curry mixed in. Endless possibilities!
