So I know it's early, but I'm bored to death in the office and thinking about dinner, since I've got nothing on the radar. I figured I could gather some ideas.
No leftovers since Thanksgiving was at the IL's, called out for pizza last night, and the cabinets are in some serious need of restocking. DH is working late and eating there so I'm on my own. Cereal or oatmeal are good right?

Cereal is always my fallback dinner.
DH is head chef at our house, but he is at a college football game at his alma mater today -- so I am in charge of dinner as he won't be home till 8. Scary proposition. Plus, we are starting our mini kitchen remodel tomorrow, so the key is to end up with minimal refrigerator-requiring leftovers. And since we will be eating pizza and takeout more frequently than usual during the remodel, I don't want to go that route tonight.
So I am thinking of chicken enchilada casserole, using a rotisserie chicken, with any casserole leftovers going in the freezer (we have a spare freezer in the basement).

DH is gone playing Dungeons and Dragons with his nerdy friends all day (yep instead of watching football, that's what major geeks do on the weekend) so I am thinking of finishing off my apple pie for lunch and dinner.

Our thanksgiving dinner was deliciouso! but I refuse to eat any leftovers bc I've been eating so bad lately. I went grocery shopping this morning so I can fill my frige with more healthy meals.
Right now Im making sauce for wheat spaghetti and im baking chicken for salads all week.
If you dont want to cook.. Last night i order a chef salad w/ an order of chicken fingers and I put a couple pieces chicken fingers on the salad. delish! I know its probably not the healthiest of salads, but its better then a cheese steak, which i love!
I vote for cereal!
Well we had the last of the Thanksgiving leftovers this morning so I've been pondering this question too. I might just grill up some chicken breasts and serve it with rice and a green salad.
