Nbr: Anyone making a Jamaican/West Indian Fruitcake?

Totally off topic, but no one in my family is making fruitcakes anymore it seems, so I'm going to try to make one this year.  The fruits have been soaked, and I'm ready to make a small "sample" cake before I start making a whole bunch for Christmas.  All of the recipes I have seen call for "browning" or "burnt sugar".  Is browning the same thing as burnt sugar?  I know I have seen burnt sugar in the store, but have never used it.  I have only used browning to make things like fish and chicken.  It seems that it would taste weird in a cake.

  • Thanks!  There are a lot of different recipes.  I'll look for one that just calls for brown sugar.  I'm definitely not going to try to brown my own sugar.  Anything that has the potential to smoke, burn, or stain my pots is out of the question lol I hope it comes out ok.  I've already been told that I waited too long to soak my fruits (2 months), but I will start earlier next year.

  • Girl i'm from Trinidad and browning (burnt sugar) is perfectly normal for fruit cake.
  • Oh good!  I just ran out on my lunch hour and bought the browning.  They had burnt sugar too, but it seemed way thicker than browning.  Wish me luck!  I will be embarassed by my family if this doesn't turn out well lol
