~Peel and cut into 4ths and boil in salted water until soft
~Drain and mash with 1-2 teaspoons of salt and 3 tablespoons butter until smooth
~Add 3/4 cup brown sugar & 4 ounces sour cream. They should be light and fluffy, might need to add more sour cream
~Pour into casserole dish and top with large marshmallows and bake until lightly browned
(If made ahead of time reheat casserole then add the marshmallows and bake)

My mother makes this every year. It's really good!
Sweet Potato Crunch:
- 3 cups of mashed sweet patatoes
- 1 tsp. of vanilla
- 1/3 cup of melted butter
TOPPING:
- 1 cup of brown sugar
- 1 cup chopped pecans
- 1/3 cup melted butter
- 1/3 cup of flour
Preheat oven to 350* degrees. Grease a 1/-1/2 quart shallow casserole dish. Combine potatoes, vanilla and butter. Place in casserole. Combine topping ingredients, sprinkle over potato mixture. Bake covered for 20 minutes, uncovered for 15.
If that sounds like too much there is always the easy mashed sweet potatoes with browned marshmallows on top!
