eating foods cooked with wine?

I don't plan to do this again, but I was unsure what to get at the Cheesecake Factory, so asked my waiter for advice. He suggested Chicken Madeira. It was great, until I got home and realized Madeira is a wine. I only ate part of it and it wasn't heavy on the sauce. Should I be worried? I'm a huge worrier and am sure this won't matter, but I didn't plan to consume ANY alcohol during pregnancy and now I'm worried. Has anyone gotten advice from their doctors on this?

  • Goodness no!  Most if not all of the alcohol would have been burned off in the cooking process.  Even if there is some left, it is such a small amount it won't hurt anything.  Calm down.

  • When cooking with wine the alcohol evaporates and only the flavor of the wine is left. You are absolutely 100% fine!

  • Thanks for the advice. Do any of you guys continue to order chicken marsala, madera, etc, while pregnant and  continue to cook with wine? Again, I don't really plan to, but am just wondering what everyone else does. Probably should be on anti-anxiety meds, but then I'd worry they'd hurt the baby!

  • Yep.  I also sip on MHs when he has a glass.  Later in pregnancy I'll probably even have a glass here and there myself.

  • Yup! I make chicken Marsala all the time. Like I said. The alcohol evaporates completely. Alcohol evaporates at 172?F...took lots of chemistry in college. So If it is simmering in a pan it is evaporating.

  • In addition to the alcohol cooking out, the amount used in a dish is often so minute it's not enough to be concerned. My French onion soup recipe works out to 1/4c red wine per serving. Marsala and dishes like that it's less. :)

  • Just like the others said, the alcohol burns off during the cooking process, and the amount used is small anyway!  I think you should enrol in prenatal yoga, it will help you to relax!

    Definitely.. I don't see why I wouldn't.  I'll even drink wine during communion at church, *gasps*

    Most definetly YES!  I love cooking with wine.  As all of the pps have said, the alchol burns off, so why give up the flavor?

  • Thanks for the replies! I know it may seem crazy to most of you for me to be worried about this, but I don't cook with wine myself, so I am not familiar with how it works. i did find information that the USDA issues that says that not all the alcohol cooks out of food. I'm on my phone so don't have the link but I saw quite a few articles referencing this. It actually sounds like my dish may have had abour 40 percent of the original alcohol content. I realize that's not much though so I'm not going to be concerned. Jsut FYI for those of you that cook with wine a lot! Now I'm gonna go try to chill out and quit worrying about something I can't control!
