We have ours in the middle without LATCH even though the sides have LATCH. It's just as safe and I have a very personal reason for making sure the baby is in the middle for as long as possible.
My local fireman put mine in and said to put it in the middle because it is more safe in that location, even though I didn't have the LATCH system in the middle. Even my car manual said to put the kid in the middle, but they obviously missed that point when they put LATCH only on the sides.....
We don't have LATCH in the middle either, and when we went to get the seat checked, in order to put it in the middle we would have to use the locking clip, which is extremely difficult to get right. The safest place is also the one that is the easiest for you to use, which in our case turned out to be with LATCH on the passenger side.

Re: carseat question...
LATCH/seat belt are equally as safe. LATCH is just easier.
Go for safest seat position, middle then passenger (curb side, less often hit) then drivers side before latch over seatbelt.
Always better in the middle.
