Salad Ideas

I am lazy, bloated, uncomfortable... I need some tasty but easy salad ideas for dinner tonight.  You know, the type that the husband can easily put together.  

ETA: on that strict diet of no cheese

  • Shiit, no cheese? Figs, strawberries, and walnuts over spinach. Mandarin oranges, mushrooms and nuts over spinach with half raspberry and half red-wine vinaigrette.

  • I'm pretty lazy...spring mix, pre-made in a bag.  I like to add olives, carrots, red onions, & hardboiled eggs (don't know if those are allowed in your diet or not).

  • I made an awesome salad last night: roasted diced butternut squash and cranberries over arugula with walnuts and a vinaigrette of warmed/cooked down apple cider/minced/shallots/cider vinegar with some dijon, salt and pepper. The recipe calls for grated parm, but you could easily leave it out.

    that sounds just delicious but you forgot my lazy part :) However, I want this recipe for a not so lazy night

  • I could eat a salad composed entirely on kalamata olives. Nice and salty, mmmm.

    I would get a bag of lettuce and visit the olive bar at the market. Get some olives, roasted peppers, grilled veggies, top with the bruchetta they have at the bar, maybe grab some grilled chicken strips or a rott. chicken, and get some dressing.

  • I love eating just a giant bowl of broccoli slaw w/ vinaigrette. Mmmmm. Crunchy and yummy.
  • I'm a little late to the party. 

    But tuck this in your pocket for another day.

    I love it.

    - a couple hearts of romaine, chopped

    - a bag of angel hair cabbage

    - lots of broccoli, chopped small 

    - a bunch of green onions, chopped

    - chopped pecans

    - chow mein noodles

    - sweet and sour dressing

    - salad oil

    - red wine vinegar

    - sugar

    - soy sauce

     

    It makes a ton.  I eat on it for days.  And you could easily chop some spinach and throw it in for a little more umph.
