NBR- help me with a brunch menu! (please)

I'm hosting a bridal shower brunch for my cousin in a few weeks and I have some of the menu done, but was wondering if you guys could help me finish it.

It starts at 11am.  Here is what I have so far:

2 breakfast casseroles (and I don't have recipes yet, so if you have a yummy one send it to me!)  baylorgirl80 at g mail

Assorted Fruit 

Cold Broccoli Salad

Donuts/ pastries/

Mimosas, juice and coffee, water

Cake

I feel like there should be something else, but I can't think of what it should.  Can you think of anything else we should have?  Or is what I have no good?  TIA!

  • I would add a meat, like a spiral ham with rolls for mini sandwiches or if you want something more breakfast oriented, pigs in a blanket or sausage kolaches that you buy.  I will email you a couple of breakfast casserole recipes.

  • I think what you have is fine, but you could add bagels and cream cheese.  Einstein Bagels is my favorite, there's one off 35 and Parmer, I think?  I used to stop there on my way to work but I'd always take the wrong exit.

    Yeah, I was thinking pigs in a blanket too, and there will be meat in at least one of the casseroles...

  • Canadagrl threw me a sip and see brunch for DS and the menu was delcious.

    Signature Omelets in a bag (you have all the different fillings out and 2 eggs in a large ziplock with the person's name on it, they fill the bag with the fillings they like, squish it all around, then toss it in rapid boiling water *using a lobster pot*) Everyone LOOOVED this.

    Hot Spinach/Articoke Dip

    Crescent sandwiches

    Fruit

    Muffins (and a gluten free one too for a special guest)

    Cookies 

    Cupcakes

    Mimosa's

    Lemonade

    Tea

     She did such an amazing job!

  • We had a potluck breakfast at work today and I made Paula Deen's French Toast Casserole..it was a big hit!
  • Since there might be people looking for healthier options, maybe a tray of raw veggies (carrots, broccoli, red/green/orange peppers) and hummus. You could also put out some plain or vanilla yogurt to eat with the fruit.

    I also like the bagel idea. You could put out some turkey/ham/roast beef by the bagels so that people could make bagel sandwiches.
