I have a friend whose children have been diagnosed with PDD. My friend put them on a gluten-free, casein free diet a few months ago to see whether it would help them.
Today I notice that my friend was in a bad mood and she even mentioned that she didn't want to go home. I'd like to provide some help for her, perhaps by bringing a meal for all to share this weekend, but I don't know how to cook this type of food. Do you know of any place that sells these food in Houston?

gluten free has really gone mainstream these, so even if you aren't close to a whole foods or central market you will be able to find items. Look in the natural foods section of the store.
As for casein, just stay away from dairy/cheese unless it specifically says it is vegan (most soy cheeses have casein in them to make the melty).
I have a gf/cf lasagna recipe that I can send you. It takes a little bit of work because you make tofu "ricotta" but the kid I used to cook it for loved it. There are also a lot of good resources online. a lot of time it just means replacing a gluten-containing product (like wheat pasta) with a rice pasta. Stay away from dairy and a lot of your own recipes can be made with very few adjustments.
Page Houstonmom here and on the Houston Nest board. Her kid is having a fundraiser that includes gluten-free, casein-free chocolate chip cookie dough. That has to be hard to find!

I COMPLETELY know where your friend is coming from about being stressed about going home--my son has a dairy allergy and is a terribly picky eater and really causes me to tense up when we're on our way home because I know he's hungry and I know that it's going to be a struggle to get him to eat. Different situation, but similar feelings.
She'll get into a routine after a while and figure out which foods are safe and things will go much more smoothly. You're a good friend for thinking of her!
