Dinner ideas

I'm trying to make a menu for the rest of the week and I need dinner ideas that are simple and tasty. We have chicken in the freezer I can use...aaaaand GO!

  • We're doing burritos tonight...pretty simple, taco meat and the stuff we like on them. Simple, easy, filling.

  • I made chicken and dumplings last night.

     

  • BBQ chicken sandwiches... put the frozen chicken in the crockpot with enough BBQ to cover and simmer, maybe a little water, and let cook all day. Serve on rolls!
  • We are having tostada salads tonight. I'm making it with ground beef but now I kinda want to use chicken instead.

  • chicken tacos - i add green pepper and onion for a little added nutrition.

    chicken parmesan (the healthy way) - grill the chicken, put marinara sauce on top along with a little cheese and throw it in the oven til the cheese melts.

    chicken fried rice - grill up the chicken, cut into strips, and saute with veggies and rice. i like to use onions, carrots, peas, yellow squash, and add an egg so it's like real fried rice. and brown rice for extra fiber. :)

  • Tonight we're having waffles, bacon & eggs tonight. Hubby friendly cooking. Lol. I've been craving escarole and beans, which is also pretty easy to make and very healthy. I think this week we are also doing chicken tacos and stir-fry in the crock-pot.

  • Tonight we made a simple yet yummy dish using vegetarian "chicken" cubes, but obviously you could just cut up your existing chicken into cubes or strips. We sauteed the chicken pieces in olive oil in a skillet, added in half a medium diced onion, 2 cloves crushed, minced garlic, salt and pepper to taste (sauteed it all a bit longer), a can of drained, diced tomatoes and a can of Eden Organics Lundberg rice and Caribbean bean mixture. You could probably just as easily add any type of wild rice or brown rice that's cooked. Finally, we threw in a few dashes of Sriracha hot chili sauce for a little heat. It was quick to throw together and very tasty and filling.
