Toddlers: 12 - 24 Months

What veggies is your LO eating these days?

We aren't doing purees, and DD's a little fussy these days.  What/how are you getting yours to eat veggies, especially lunchtime?  What kind, and how served?  TIA!

  • In general, their favorites have been broccoli, cauliflower and green beans. We serve them steamed. They also love baked sweet potato fries, and Will loves avocado. They both like diced cucumber and tomatoes, too. Those are the only veggies they'll consistently eat; anything else is hit or miss.

  • Lunch is hard! But he gets peas, soup veggies (no broth because he aspirates), cooked baby carrots. I find pasta dishes with list of veggies mixed in are the best for getting him to eat his veggies. Meatballs can "hide" all kinds of fabulous veggies--mushrooms, mixed veggies, onions, etc. And they are easy to make ahead and freeze. If left on his own, he'll skip the veggies, every time. Just like his daddy :) oh! Also, I mix pumpkin in oatmeal (bumpie suggestion), sweet potato and zucchini pancakes, and make lots of pumpkin pie. I figure the sugar is a compromise...he also doesn't gain weight well, so we do whatever it takes to get him to eat!
  • DD loves the mixed veggies (green beans, carrots, peas) from Schwan's.  I have tried several other frozen brands at the grocery store and they just are not the same as Schwan's according to DD. I steam them in those microwave bags. DD also loves canned green beans and sweet potato fries.

  • Trying to take advantage of the fall produce so we have been having zucchinni, yellow squash, eggplant, butternut squash and pumkin everything.
  •   Nora loves peas and carrots (easy--I just keep a bag of these frozen and heat small amounts as needed).  She'll also eat squash, sweet potatoes, and green beans.  Broccoli is a no-go, but I hate it too, so I don't force it on her:)  I just warm it enough not to be cold (for all veggies).  I'll bake chunks of sweet potatoes, which are her fav.  I try to offer fruits and veggies at the beginning of mealtime, so that she eats those before her meats/carbs.  Avovcado (fruit or veggie) is a big hit too, so if she has a picky day, I'll just cut that up and let her go to town. 

    If you need a sneaky way to get veggies in, try making quesadillas with 1/2 cheese and 1/2 shredded carrots.  DD loves 'em.

  • DD will eat asparagus, broccoli, cauliflower, green beans, carrots, squash/zucchini, corn on the cob, tomato, cucumber, peas, avocado (or is that a fruit?)... and I think that may be it..? Oh, she loves veggie burgers, too. 

    The corn on the cob and the peas are boiled, the cucumber, tomato, and avocado are given fresh, the carrots are oven roasted with italian seasoning, and the rest are steamed. We usually give her foods cut into strips, but somethings we make bite-sized for her. She loves dipping foods these days, so sometimes I will give her a little bit of ranch in a small dipping bowl, or thin out some hummus a bit to let her dip her veggies. We offer her the veggies first at lunch and dinner, and she is usually really good about eating a decent portion. Then we can give her a plate with the rest of her meal, and she goes to town. 

  • We use the frozen steam fresh veggies alot. She LOVES broccoli, carrots, peas, potatoes, sweet potatoes, corn. As long as its somewhat mushy she will pretty much eat anything.

  • DD is hit or miss.  Some days she loves green beans, others she hates them.  It kinda is like that for all veggies these days.  So I just keep trying to mix it up.  But we no longer do purees, she prefers to feed herself.  I steam or bake them.

  • Oh yeah, also carrot oatmeal muffins, pumpkin muffins, and Alex loves the Weight Watchers turkey-veggie chili recipe, which is loaded with diced yellow squash, zucchini and tomatoes.

  • Not much. She'll eat spinach mixed in with stuff, sweet potatoes, etc.

    She does loooove avacado, but I think that's actually a fruit.

  • Thanks for the great ideas!  DD used to be cool with steamed veggies, but not so much anymore.  I am going to have to get creative and hide it in some other foods like many of you do.  It has worked with my meatballs (with chopped zucchini).  Maybe I can even interest her in dipping her veggies.  Thanks again!

  • So far DD is a fan of broccoli and peppers the most. She is still eating purees though. She likes corn and peas and sweet potato too. I need some new ideas too!
  • He is a great eater - I am so lucky.

    He loves steamed broccoli, cauliflower and carrots - he just picks pieces up and eats them. He'll do the same w/ green peas but I tend to throw them into casseroles/potpies/etc rather than just serving them.

    I will mash sweet potatoes for him and that's always a hit. I like to saute yellow (summer) squash with red bell pepper in a little olive oil or butter for him. His (and my) favorite way to eat eggplant is fried!!!

    I do one-dish meals when I can....get starch/protein/veggie all in at once. I don't eat meat and only serve him organic meat, so always go light on the meat and heavy on the veggies.

    All I did differently was add 1 chopped red bell peper and 1/2 chopped green bell pepper, subsituted a can of red beans for one of the black beans, and seasoned a bit more.

  • Wow, fantastic ideas on here for hiding veggies :) 

    DS loves dipping, so when he doesn't feel like eating, we just bring out some sort of "sauce" - Tzatiki, hummus, Applesauce, Yogurt - and the food magically disappears.
