Creative vegetable serving suggestions

I am having the hardest time choking down any vegetables. I have tried:

Roasting

Steaming

Stir-frying

Mashing (in the case of cauliflower at least)

Salads

Raw veggies with dip

Sometimes I can get down a few bites, but more often than not, I start gagging after just a piece or two. The only thing I seem to be able to eat is raw carrots, which is fine, but you can only have so much of that a day. Anyone have any suggestions, either for good veggies or for ways I can hide vegetables in my food. I've always been able to get plenty of veggies everyday, but pregnancy has made this really hard for me!

  • The only way I could cram vegetables down until recently was to mix very steamed broccoli (can't stand crunchy broccoli) in mac n' cheese (mmmm), vegetable soup/stew, or v-8 fusion. Oh yeah, rice, bean, cheese, and corn burritos if you want to count corn.

  • I've been putting frozen broccoli in pasta and rice mixes--like pasta-and-sauce or rice-and-sauce side dishes. Or having veggies with a cheese sauce. I know--SOOO not healthy--but I'm having the same problem. Oh, except I LOVE tomatoes. Tomato everything...sauce, juice, soup, etc.

  • Make some zucchini chocolate chip cookies :)  So yummy!  The come out really cake like!  I also like making savory zucchini pancakes and having them with mustard. I know both of those use zucchini but they are great alternatives to the norm.

    Also, what about veggie sandwiches?  I have been craving lots of sandwiches and I always like to load them up with veggies.  

  • i like to cook carrots and put a little brown sugar on them to sweeten them up
  • roasted veggies on a nice, chewy piece of flatbread with a bunch of cheese melted on top

    vegetable soup with bread or crackers for dipping

    a simple pasta primavera with roasted veggies and a bunch of cheese

    spaghetti bolognese with a bunch of veggies hidden in the sauce

     veggie pizza

    basically, anything with veggies and carbs and usually cheese :)

  • I am having the same problem also and have found that V-8 Fusion taste more like a fruit Juice along with Mott's they make an Apple Juice that has a serving of Veggies also :) Also Amazingly enough Chef Boyardee Ravoli's have a serving of Veggies... Anything I can find that disguises is the best for me! Hope this helps you hun!
  • Spaghetti squash with marinara sauce and a little Parmesan.

    Zucchini ribbons (take a potato peeler and peel the zucchini ribbons lenghtwise until you have a bunch of strips), sauteed in a little butter/olive oil and topped with Parmesan.

    And I agree with veggie lasagna.

    Basically, anything with enough cheese to hide the vegetable flavor.

  • I get my veggies in 2 ways these days:

     

    1.) Subway sandwiches....yum

     

    2,.) Soups...I made an awesome beef stew last weekend.  Good for colder weather and easy to stick in the crock pot.

  • I've been hiding a lot of corn, squash, and zuchini (sp?) in my sauces.  Or even just loading them up in marinara spaghetti sauce.  Also, instead of making spaghetti, I substitute the pasta with spaghetti squash.  You just cut the squash in half, heat it up, scoop out the seeds, and then scoop out the strands of squash and it looks like spaghetti.  I mix it with sauce and shrimp.
  • I've been rocking the fruit more than veggies. I can't stomach them very well. I have been hiding them in different ways, if I can fool myself. I will sometimes stomach them in a big salad (thankfully I still love my fresh spinach.) My biggest nemesis is broccoli.
  • Vegetable soup... I just use one of those cartons of beef broth, a bottle of V8, and dump in canned tomatoes and frozen veggies.  I do the mixed, but you can pick and choose the ones you like.  You can add hamburger, or make tiny meatballs - that's what I usually do, but haven't felt like messing with it.  You can also leave out the beef broth - just makes the flavor a little richer.

    You can put the mashed cauliflower in mashed potatoes.

    I have a recipe for zuchinni and potatoes au gratin, but haven't tried it yet...

    I've been really wanting salad lately myself, but only want it with Olive Garden dressing...
