I need freezer meal recipes.

I want to devote the next few days to cooking some good make ahead freezer meals for the weeks after Sadie comes.  Anyone have any good recipes they can share?

Sadie is not impressed.

  • This works great as a freezer meal and its also easy to keep the ingredients handy to make fresh.  We add shredded chicken to it, but it is technically a vegetarian meal.

  • Chicken Tortilla Soup 
    Ingredients:

    2 1/2 cans chicken broth
    1 onion chopped (I only use half)
    2 cans diced tomatoes
    1 can Rotel (mild)
    1 jar salsa
    1 tsp garlic powder
    1 Tbsp cumin
    2 cups cooked chicken (I buy cans, easier)
    1 can cream of chicken soup
    1 zucchini, chopped
    2 yellow squash, chopped
    1 small bunch cilantro

    Bring broth to a boil. Add onion and cook until tender. Stir in all ingredients except zucchini and squash. Simmer one hour. Add zucchini and squash and continue to simmer until tender. Serve with tortilla chips.


    *Recipe calls for cilantro but have never used it. Up to you. And I buy Kroger brand for all but chicken (Tyson) and Rotel. And you can always add more cumin if you want (I do). Enjoy.
     
    My sister sent me this recipe and it was awesome even frozen.  She doesn't use cilantro and uses fresh chicken breasts instead of canned chicken.

  • Also I make and freeze homemade spaghetti sauce.  I use about 1.5 pounds ground something (either beef, chicken, or turkey depending on how healthy I feel like being and what is on sale), a large can of tomato sauce, a small can of Italian herbs tomato paste, oregano, parsley, garlic, onion powder.

    I will usually brown the meat with green pepper and onion diced up.  Drain it and add all the other stuff. 

    This way all I have to make is noodles.

  • I just made a crapload of homemade spaghetti sauce & meatballs to freeze last night. Not sure what got into me:

    Tomato Sauce:
    1/2 cup chopped onion
    3 Tbs olive oil
    1 clove garlic
    2 cans (1 1b. 4oz each) of tomatoes.
    **mix all above ingredients in food processor**
    1 can 8oz. tomato sauce
    1 can (6oz.) tomato paste
    1 cup water
    1 Tps basil
    2 Tbs minced parsley
    2 Tps salt
    1/4 tps pepper
     
    Mix all ingredients into pot, bring to boil. Simmer over low heat 45 mins. then add meatballs for 15 mins. (total sauce cook time is 1 hour).
     
    Meatballs:
    1 LB. hamburger
    1 cup bread crumbs
    1 Tbs parsley minced
    1 clove garlic cut fine
    1/2 cup milk
    2 egges beaten
    1 1/2 tps salt
    1/8 tps pepper
     
    brown on all sides, throw into sauce for 15 mins.

  • Whole pot pies also freeze well, but my mom's recipe hasn't worked yet for me for freezing so you could look up a recipe.

  • Also, not sure if you are a steak tip or grilling fan - but we buy steak tips & marinate them in some BBQ sauce, stick 'em in the freezer. Super easy to pull out, thaw, & grill. Throw on top of salad & you have a super yummy quick meal.
  • Someone from here (I think eco?) gave me this recipe... so good! We also did chili, lasagna, and chicken enchiladas for our freezer meals. We regretted doing the lasagna since everyone brought us either lasagna or stuffed shells, so we were on pasta overload :-P

    This made me laugh. We got so many stuffed shells after Jillian died that I don't think I'll ever eat them again.

    Seriously! I mean you appreciate the thought, but we got to the point where we were so sick of them.

    Although one person brought meat stuffed shells, and those were ah-may-zing.

  • I found Don't Panic: Dinner's in the Freezer at the local library and the recipes were delish! And not all of them were casseroles!
