When You Don't Feel Like Cooking, What Do You Make?

Lately with LO teething, she has been extremely high maintenance. More than normal! By the end of the day, cooking is the last thing I want to do. We have been eating so much fast food lately and I am getting sick of it. What's your easy, not much effort, go to meal?

  • Breakfast for dinner. Eggs and toast. Bowl of cereal. I'm also a big fan of grilled cheese and I make soup for it for DH ( I hate soup)

  • We freeze meals ahead of time for days like that. Today we are reheating some home made chili.
  • Sandwiches or cereal.
  • I do pasta bowls. Boil up some penne, cook up cubed chicken and various veggies (broccoli, bell pepper, onion and mushroom is always good) in a skillet with some olive oil, top with shredded cheese, salt, pepper and a few red pepper flakes for kick. Delicious and it's a really easy meal. With the cutting board and knife for chopping, the pot for pasta and skilelt for the rest, you're looking at like, four things to clean.

  • DH isn't a huge fan of dinner since he eats a later lunch.  We don't cook very often.  I'll usually fix a sandwich or something simple like tacos or spaghetti.  That is one thing I wish we could do together as a family, but DH is either not hungry when he gets home or wants to start cooking at 8 when I'm so hungry I'm irritable.

  • DH LOVES frozen pizza.

    I thaw out meat the night prior, have tons of boxes of instant sides (Uncle Bens wild rice is my favorite) and we have a freezer full of frozen veggies.

    I love grilled cheese sandwiches with tomato soup.

  • We're going thru the exact same thing!!! Here's my take it-I got a gift certificate for Supper Solutions from one of my friends before Mr. D was born. It has been a life saver for us. I go once a month now and make meals to freeze for exactly this time. Tonight I'm throwing in the ranchero burritos that I made... If you've got a make meal place near you... GO!

  • Either a frozen meal (like lasagna, stuffed shells, etc - Bertolli are great!) or something easy like Tacos (beans/rotel, cheese, rice and shells) spaghetti (jar sauce and boil noodles - waa la!) or yellow rice and black beans (cook rice and heat up beans!)  Usually I eat bread and butter with them and heat up a veggie (peas, zucchini, green beans, etc). But all are easy and yummy!

  • got another one....  chicken breasts, throw on bbq sauce and cook 375-400 for 25minutes. Last 10 minutes, throw on canned mushrooms(drained), pre cooked bacon, and some swiss cheese. Serve with green beans.

  • Before going vegetarian, we used to buy those "Voila!" frozen dinners. The best one IMO is garlic chicken. It can be made in about 10 minutes, and it comes with large veggie portions, so it's not completely unhealthy.

  • I usually throw things in the crock pot if I don't feel like cooking, or make breakfast for dinner. If its really bad and I don't wanna turn on the crock pot I throw those pf chang frozen meals in a skillet and its done in 12 minutes.

  • Bertolli skillet meals. Throw it in a skillet for 10 mins or so. You only have to stir it once or twice and it's done!

  • I spend Monday night cooking things I can freeze for the week (or two). Otherwise, I'm a big fan of the crock pot.  But it does require cutting and such in the am.

  • I usually make pasta with jarred sauce and frozen meatballs (mama celeste ones are really good!)  or frozen raviolis.  Or perdue makes these chicken popper things in flavors like quesadilla nad buffalo.  I make those with some mccain smiles or french fries.  if you feel like semi cooking, a really easy dinner is what I call salsa chicken.  You get your favorite salsa, put a little bit in the bottom of a baking dish and then lay boneless chicken breasts in the dish.  Then take the rest of the salsa and cover the chicken.  Cover with foil, cook at around 425 for about 20 min or so (depending on how thick the chicken is, etc.) take it out, get your favorite shredded cheese (shredded chedder is great or the taco or mexican cheese blends work perfectly too) then put it back in the oven without the foil till the cheese is brown.  Serve over noodles or rice :)  Can do the same thing with your favorite italian dressing instead of salsa too.

  • I'm getting some great ideas here!

    I've been doing sandwiches or pasta.  I got veggie burgers at Costco and I heat one up in the microwave for a minute with some whole grain bread and lettuce.  yummy.  I've made extra pasta and kept in in the fridge.  Also frozen soy beans that I boil are great for a snack or for dinner (if dieting)  That's what I had today for dinner, even shared some with the dogs :o

    I also got frozen strawberries and other berries at costco.  I throw them in a blender with vanilla yougurt (I buy it in big tubs) also add OJ or other kind of juice, makes for great breakfast or as a snack or a meal.  Suprisingly the "smoothie" is very filling.

    I also keep canned tuna around all the time.  It's easy to just throw some mayo in it and I like to dice up cucumbers and red peppers too.  Add a piece of whole grain bread and yummmy....
