WFD?

We used to do this weekly on this board, and I don't know what happened...but we stopped. Anyway, jut looking to bring it back (mostly for selfish reasons - haha) because I need some new dinner ideas/recipes and I'm sure there are others who might be able to relate. 

And hopefully this will get the boards moving a little. So...the big question...what's for dinner? Or what do you have planned for the rest of the week?

  • I have a big pot of minestrone on the stove right now. Veggies are on sale at Publix this week (super cheap) so I planned meals around that. Tomorrow is ratatouille with veal over rice.

  • Here was my plan for the week:

    Sunday- baked turkey, steamed new potatoes w/green beans & cornbread 

    Monday- ropa veija over white rice, plaintains (but I did start it on Sunday night-I slow cooked it overnight)

    Tuesday- meatloaf, mashed potatoes & corn

    Wednesday- grilled chicken (marinated in mojo) yellow rice, steamed aspargus.

    Thursday- pizza & garlic bread

    Friday - OUT  :)

    I usually make my menus on Saturday or Sunday.. :)

  • I can't remember the order I did it this week but I made...

     Mini meatballs with ziti and steamed veggies

     Crock pot whole chicken with carrots, celery, onions and potatoes with a side of couscous

    Mustard chicken with baked potatoes and steamed mixed veggies

    Stir fry in peanut sauce with brown rice.

  • So apparently it's a bad idea to ask WFD before you've had lunch! LOL All of the meals sound delicious and made me really hungry. 

    And Liz...dinner at Casa H is al thanks to you tonight. i just took some flank steak out. We're bringing a little Miami up here and having some ropa vieja. Que rico! :) 

  • I was so good last year at planning inners ahead of time... now not so much!  Lately, there is always something so we haven't been eating at home.  I do miss home cooked meals though... eating out gets old!  I want to get back into crockpot meals, as those would be awesome to prepare when I'm home w/ the boys.

    I've been going back and forth between getting a crockpot. I think it would be a huge time saver for dinner and would eliminate the last minute thrown together ideas I've ben coming up with lately. But DH is a little worried about the safety factor of just leaving it plugged in all day especially if we're not home or leaving it on while I take Carley out for a walk. WDYT? 

  • Jackie, dont worry, I think we all go through waves.  There are some weeks when I am dead on.. Others I am soo far out in left field and always scrambling for dinner.  For me it is best if I plan it out, if not I would eat out all the time.  Its just too hard to think of something once you get home at 5ish..

    Yay, Im glad I inspired.. :) I loooove ropa vieja.

    I had the same concern at first.  I got it, but then it sat in the box for almost a yr.  Then I was home one wkday and decided to try it out... since I knew I was going to be home all day.  I saw how it worked... and really it did nothing but get hot all day!  LOL  And the smell when you get home, is so yummy.  I figured, there are so many people in this world that have them, and you really don't hear of any fires or whatever that they must be safe.  I usually make sure to place it over my ceramic cooktop, just to not overheat the granite... not that it is necessary, but just personal preference.   GO FOR IT!

    I wouldn't even know where to start. Any recs on a good crockpot? Oh, and a crockpot recipe book, too. Now I just need to convince DH that they're perfectly ok to use and the house is going to burn down. :P 

  • I got mine at Costco, and it is a larger one.  What I like about mine is that it switches to "warm" once the food is cooked.  It brought a good size recipe book, which I started off using.  Then bought a random crockpot recipe book at TJMaxx... nothing extraordinary. 

    This blog has decent recipes too!
