I have had a ton of energy this week so I am cooking for the second day in a row! Grilled pork chops, scalloped potatoes, and zuchinni, and probably green beans since no one but me like zuchinni!
I don't feel like cooking but I kind of have to... we had China last night (sorry hyfagal there is none left) and then night before was pizza. Soooo... marinated flank steak, mashed potatoes and sauteed zucchini. I hate defrosting meat.
I baked a loaf of focaccia this morning, so I'll probably make panini for dinner. That way DH can have his carnivorous stuff in there and I can have my veggie stuff and I only have to make one meal.
Usually I cook two different ones, but I'm too lazy tonight.
Baked pork chops and a slew of veggies (needed to use up our CSA this week): steamed broccoli and carrots, roasted sweet potatoes, beets, and squash. It was a feast and delicious!

I made cold pasta salad.
It has spiral noodles, black olives, cherry tomatoes, cubed mozzarella, pepperoni, with part miracle whip & part thousand island dressing mixed in.
YUM! It's cooling right now I can't wait to eat it!

I'm home alone tonight, so I had breakfast for dinner: scrambled eggs, turkey bacon, english muffin, OJ.
Then I had a 1/2 pint of Snickers ice cream.
