NBR: meatloaf recipe?

I use my boring meatloaf recipe- meat, b-crumbs, diced onion mixed with egg, milk and ketchup...it's OK but I know there are some good ones out there....anybody have any suggestions?  Maybe somehting with a sauce?

  • I tried it with the Hunts tomato basil (i think that is the flavor) when I mixed it up........and sometimes i add a small can of green chilies for a little kick

  • I added a can of rotel to spice it up a little, I also tried half beef half sausage and it was very good. I used a spicy jimmy dean sausage. Maybe try bbq sauce?

     2 pounds ground turkey

    2 eggs (or egg substitute)

    2 onions, chopped

    3/4 bell pepper, chopped

    2 carrots, shredded (this keeps the meat loaf moist)

    1 ? cups bread crumbs

    olive oil

    1 can 98% fat free cream of mushroom soup

     

    Pour just enough olive oil in bottom of pot and saut? onions, bellpepper and carrots  until tender.  Cool off completely and mix with eggs and ground turkey.  Form loaves.  This makes extra so you can freeze loaves for future dinners.   Top with soup and bake at 350 for about 1 hour or until thoroughly cooked in the middle.

  • I don't have it with me, but if you go to the food network website, Tyler Florence has a recipe for meatloaf that is delicious!  It has a tomato relish and is covered in bacon.  It's the only one my DH will eat now.

  • Replace some of the bread crumb with cheddar cheese.  So good :)

    I do this.  And I add a half jar of salsa.  Sounds weird but its so good.

  • I mix a can of Rotel in it, then form it in the pan, scoop out a little groove in the middle and stuff with cheese and green chilies, then cover the groove with meat.  Sooo good!
  • If you're feeling asian-y, this is a good one to switch things up!
