What is a good beef dish that would stay well in a chafing dish and could do well with the rest of the menu?

Nothing with a tomato sauce or chopped meat please

Here is the rest of the menu:

Antipasti: cold cut platter, variety of olives, cheeses, marinated mushrooms

Pastas- Rotini with tomato sauce, Penne al la vodka

Sides: couscous salad, garden salad, caprese salad, string beans, asparagus and maybe broccoli

Main: balsamic rosemary chicken pieces, roast pig, eggplant rollatini, sausage pepper & onions, paella.

Dessert: Event cake, Cookie Platters and mini cupcakes

  • I'm not sure how well it would work in a chafing dish, but what about beef tenderloin? If the chafing dish isn't too hot, it shouldn't over cook the tenderloin (I think).

    And your menu sounds fabulous (even without the beef).

  • my son's baptism. We were going to just do marinated steaks on the grill but we had to switch the date because my inlaws booked a trip. Now i dont have a beef dish. Its going to be in October so the weather will be to cold to have at my house-no BBQ at the hall we booked. Im cooking everything before and bringing it to the hall that morning. I need something that wont dry out in a chaffing dish.

  • A roast beef.  you can cook it to rare which is exceptable but if it cooks more in the chafing dish it will be okay. If you preslice it, it will get more done so I would suggest not slicing it and letting people carve off what they want.

  • Would a Kabob dry out? Marinated well, strung up next to onions and bell peppers? You could keep some marinade aside to put on the bottom of the chaffing dish (drizzle over meat once it's in the dish.)

    no veal- there are a few Anti-veal people in my family, mainly my mom.

    maybe the roast, i can get a big prime rib at costco. im just scared it will over cook. the food is going to be dropped off (cooked) at the hall at 12, before the church. the party starts at 2.

    i still have to get a DJ- any suggestions? im not doing open bar. ill have wine and beer. our families arent big liquor drinkers.

  • Meatballs. In a crock pot, if you can. Goes the best with the rest of your dishes, seems like a nice Italian party :)
