How often do you offer vegetables to your LO? How much of it do you think they actually eat? Which vegetables do you find your LO is more likely to eat? How do you prepare veggies that they tend to like? Do you typically use fresh, canned or frozen vegetables?
Sorry for so many questions, but I'm just curious of what others have found. DD tends to not eat many if any vegetables at all. I actually gave her some Amy's Organic vegetable soup for dinner tonight and she tore it up! Might be my go-to for now!
Thanks!
Re: Questions about vegetables.
My DD doesn't eat as many veggies as I'd like her to . . . but she does eat some.
Honestly, it depends on her mood and the vegetable. She likes broccoli, for instance, if I steam it with some seasonings. She generally likes green beans (like canned) but not so much if they are saut?ed. She'll sometimes eat carrots as long as they are soft, and she sometimes likes squash (saut?ed). I know they aren't the best veggies, but she does generally like corn and potatoes. Sometimes she'll eat tomatoes (diced up).
He gets them at least once a day, but he devours at least 2-3 servings any time he has them so most days that's enough. He LOVES vegetables.
We have a lot of good luck with peas, beans, corn, and mixed veggies with diced carrots. They're really easy to pick up and they taste good - not too much flavor, but not bland. B could probably down an entire can of lima beans if we let him, they're his current favorite. He's also quite a fan of baby corn, but he only gets that when we order Chinese or go out to Thai, since we can't really find it in the grocery store.
We typically buy frozen for B when it comes to that type of veggie. He likes squash and sweet potatoes, but we get those fresh. He likes peppers too, as long as they're slightly warm (on pizza is great). Black olives, onions, mushrooms and other things like that he enjoys on pizza or in pasta.

Not as much as she should.. because I'm more of a fruit eater (plus we have a ton of fresh fruit thanks to my in-laws farm- peaches, pears, apples, grapes, blueberries, etc.). But, I'm trying to give it to DD more. She will eat them. I usually buy frozen mixed veggies and she eats it all.. corn, green beans, peas, broccoli. I made a cup the other day to use over the next couple of days, and while I was gone, DH gave the whole thing to her and she ate it all! Her poops were definitely colorful after that!
Oh, and DD loves avocado too!
I do fresh & frozen, no canned.
They get them at lunch & dinner every day but I admit, I'm a big veggie 'hider'. They will eat very few just plain & since they're in DC and dinner time is a crazy rush, I like to have things made ahead that have veggies & protein & carbs all together rather than having to prep everything separately.
Examples- meatballs or meatloaf w/ veggies mixed in, pizza bites where i make my own sauce & blend up some red &yellow peppers and carrots and mix in the sauce, scrambled eggs w/ cheese & spinach (i think frozen chopped spinach is like the best thing ever for this purpose), broccoli bites from wholesomebabyfoods, frittatas w/ veggies mixed in, etc.
She gets 3 a day; either fresh or frozen.
I typically get frozen lima beans, green beans, peas, & corn. If I'm only making them for DD, I microwave them. So easy!
We do fresh broccoli, cucumbers, green, yellow, & red bell peppers, & green beans. She will eat those raw as a snack.
I also cheat & still give her baby food when I want to get squash, carrots, or sweet potatoes into her. It's the only way she'll eat them.
We offer veggies probably 2-4 times per day. He gets them for morning snack, lunch, dinner, and sometimes his afternoon snack. DS likes green beans, broccoli, carrots, sweet potatoes, and peas for the usual ones. He eats most of everything we give him.
We use a lot of canned veggies and fresh. Sweet potatoes are steamed in the microwave. Carrots and broccoli are steamed on the stove. Peas and green beans are canned. I tried fresh and frozen with the last two but he just didn't want them. We get the no salt canned ones for him.
One thing that DS LOVES is to have anything to dip veggies in. We used to do salsa but now he loves our homemade balsamic vinegarette. You could try steaming them with some type of seasoning. Another thing he loves right now is spaghetti. I put spinach in it. We also make meatballs with spinach in them. GL!
DS is not a veggie fan. ?At All. ?Even if I smother in cheese sauce, or add spices. ?The only veggies I've gotten him to eat are peas and sweet potatoes. ?(He'll eat tomatoes and avocados, but those are technically veggies, and he'll eat corn but I don't consider that as having much nutritional value). ?He'll eat veggies on pizza or in spaghetti sauce, but that's about it.
I try to offer veggies at least once a day. ?I know I should offer more, but it's frustrating to make veggies that I know he'll refuse. ?When I do make them, they're either fresh or frozen. ?I try to avoid canned stuff because there's usually a lot of extra sodium.?
