Ham, Cheese, Broccoli, Rice Casserole

I have a ton of leftover ham from Monica's shower and I wanted to use some of it.  I also had 1/2 block of velveeta in my fridge from our football party we had that I needed to use up - So I made a casserole dish out of it and it was really pretty good (a little on the salty side though).

I used the boil in a bag brown rice - cooked 2 packages of that.

Chop up ham - it was spiral sliced so it was really easy.  I probably had 2 cups of ham ??? 

Cube velveeta

1 can of cream of chicken

I used a steam bag of broccoli so I threw that in the microwave. 

After the rice is done, drain it.  While the rice is draining, add together the cheese, cream of chicken soup, ham and broccoli.  Add back the rice.  Put in 9x13 casserole dish - top with shredded cheese if you want.

Cook at 350 for 20 minutes (until bubbly)

 

this was really good and easy - it was a little salty - maybe just a cup of milk would be good instead of the soup?  

Avery LOVED it - she ate most of hte broccoli out of the casserole (yes, the entire thing) but liked the rice too.

  • Saving this recipe for future use!  I ended up making ham and cheese omelets (with roasted red peppers & capers) for dinner last night and then freezing the rest.  But, that will be great to do after Lanie is born!  Thanks!

    When I am in a really lazy mood for dinner, I make my "chicken macaroni".  All I do is buy the large family box of velveeta shells & cheese and 1 large can of Swanson white chicken.  Cook the pasta, add the cheese, and add the chicken shredded up...ta-da...dinner!

    Lately we have been adding steamed broccoli to it as well.

    I am sure you could do the same thing with ham.

    Definitely my go to, super duper lazy dinner!
