what's your go-to having company over dinner?

I should also add that it needs to be somewhat quick and easy as i don't have time with 2 little ones to be cooking for hours :P I am at a loss on what to cook for some friends we have coming over next weekend. I was thinking lasagna but i'm not sure if that's "fancy" enough. What is something that you like to make when for guests. thanks:)

  • Garlic Cheddar Chicken, baked Asparagus and Ceaser Salad - brownies w/raspberries and cool whip for dessert.

    The chicken can be prepped earlier and the chicken and asparagus both go in the oven.

  • If I'm going fancy, I'll usually do salmon and asparagus. Or DH will grill steaks.

     

    If not, I do something like "salsa chicken" (chicken with tomatos and spices) over rice with some sort of veggie on the side.

  • I've never cooked anything fancy lol.  My go to is baked ziti - garlic bread and a salad and presto, a meal.

  • frozen cheese ravilio, baked with a jar of spag. sauce and garlic bread, and a salad (i typ get a bag salad and add veggies, tomatos...)

  • Sausage Spinach Pasta - Quick, easy, and somewhat fancy. Warm some olive oil in pan, sautee diced onion, add italian sausage (I remove the casing and mash it up), sprinkle with chili flakes, once cooked add two cans diced tomatoes, let simmer for a few then toss with penne noodles ( i add a little more olive oil to noodles), a bag of fresh spinach till it wilts, and then top with fresh parmesean cheese (i've been omitting this last part since i can't do dairy now and it's just as good).

  • Roast chicken or pot roast. Both super simple. With the pot roast I just mix a packet of gravy with the meat and carrots and onions in the crock pot and let it cook all day. I'll make mashed potatoes and crossoints and thicken the gravy. Same with the chicken except I cook it in the oven for about 4 hours.

  • i use the crockpot!

    Either roasted chicken or 40 clove garlic chicken.  pair with steamed veggies, mashed potatoes (i use instant ...try baby red idahoan brand..they are really good) and a field of greens salad. 

    add some french bread and buy/make a quick bruschetta spread for an easy appetizer.
