We have 5 cucumbers in our produce box this week, and neither DH or I like them. I was thinking we could freeze them for when we give them to Margo in a few months... has anyone done this? I'm looking for the least complicated way, anything involving pickling isn't going to happen And since it's for her, I'd like to not have to add salt & sugar...TIA for any advice

I've never heard of freezing cucumbers and it just seems wrong to me. Usually if you freeze a veggie, you cook it later. Would you be cooking cucumbers? The water content is going to be a problem defrosting them - they'll be really soggy. Plus you'd probably have to blanche them first.
I'd just give them to a neighbor or friend.
ETA: After a quick googling (which you probably did), most recipes freeze them in a brine which is probably not what you want for Margo.

Alethea, they're all yours! They stay good for a while, right? I can bring them to book club Weds, or if you want to meet up today or tomorrow to hand them off, I can do that too!
