I guess I don't see the need for the bedding sets since with newborns you don't use the comforter and I don't plan on using bumpers. Am I missing something completely? In a newborn's crib don't you basically just need fitted sheets? If I am completely wrong please please let me know.

the comforter and bed skirt is really just decorative. I'm still debating if I should get a bedding set myself.
You're right.
However, I used the bumper when DD turned 6 months. And we use her comforter as a blanket for her to crawl/play on when we're out.

nope you're pretty much right, the rest is cosmetic. with the exception of bumpers/breathable bumpers which of course is a controversial topic.
we won't be using a crib for around 6 months in favor of a co-sleeper, but when we do I think all I'm going to get is a crib skirt - just to hide the under part and bring a splash of color to the crib. I don't know the verdict on bumpers at that age but will do my research.

I had to use the bumper for DD once she hit 6 months old. She started scooting at 5 months and crawling at 6. Once that happened, her legs and arms used to get stuck in the railings all the time. She was rolling over on her own (of course), so I knew the risk of SID was significantly lower.
As for the entire bedding set, it's definitely not NEEDED, but it is cute. If you think about it, we only need one sheet, pillow cases and a comforter on our beds, but we purchase shams, bed skirts, throw pillows, etc... It's strictly for show :-)
