Whats on your menus this week?

    Su= waffle breakfast sandwiches

    M= cranberry pulled pork sandwiches w/ coleslaw

    T= Albondigas/ rice/ salad

    W= Chile Verde  Tacos/ beans

    Th= Salmon cakes w/ salad and rice pilaf

    F= Eat out

    Sa= Shrimp pasta toss

     I just found some chicken thighs in the freezer and for some reason I am having a hard time figuring what to make that I dont already usually make. Maybe some soup?

    It's a short list this week because this weekend we're going camping.

    Monday- Nachos

    Tuesday- gym night DH is making something up

    Wednesday- Quinoa and pepper salad

    Thursday- Veggie Thai Pad

    Good question about the freezer...I'll have to check!

    Tuesday - Chicken Stuffing Pie and Green Beans

    Wednesday - Stuffed Peppers

    Thursday - Chicken Peppers Pasta

    Friday/Saturday - Eat Out/Garlic Beef Bake (we pick a night to eat out and a night to eat in)

    Sunday - Meatloaf, Mashed Potatoes, and Veggies

    Monday-Southwest Cilantro-lime salad with steak on top

    Tuesday- Baked Chicken, Cauliflower, fruit Salad

    Wednesday- Eat at Church

    Thursday-Meat loaf, Mashed potatoes, green beans

    Friday-Chicken Salad, Fruit Salad

    Saturday-Out

    Sun--Rotisserie chicken with salad

    Mon--Ground turkey enchiladas with salad

    Tues--Breakfast casserole with fruit salad

    Wed--Tilapia filets, and pasta salad with peppers, tomatoes, cucumbers

    Thurs--Neighborhood cookout

    Weekend--up in the air; probably out one night, may cook out with friends one night

    M - BBQ pulled pork sandwiches (in the slow cooker)

    T - Roasted whole Chicken, mashed potatoes and green beans

    W - steak on the grill w/ baked potatoes and some sort of veggie

    Th - Spaghetti, garlic toast, corn

    F - Beef enchiladas, tomato and corn salad

     

    I split an organic cow w/ some friends back in March..I've had 1/4 of a cow in my freezer and it's getting to the point where it's time to use it all! I've used most of the ground beef and roasts, a few steaks... but there is still a LOT left and I just need to use it up! I will probably end up throwing out the 7 chunks of liver and the heart. :/

    Sun- Creamy basil pasta with chicken, garlic bread

    Mon- Sandwiches and salad(DH is trying to lose weight and had a lunch meeting at work with a big meal so he didn't want anything heavy for dinner)

    Tues- Hawaiian chicken and rice, broccoli

    Wed- Meatloaf, mashed potatoes, green beans

    Thurs- Homemade pizza

    Fri- Leaving for vacation!!!!!

    tomorrow - maple glazed salmon, roasted brussel sprouts
    wed - not sure...but i am thinking of trying arti's bombay sloppy joes!
    thursday - takeout  greek, as usual
    fri - fish or chicken w/ red pepper sauce or tzatziki

    i have eggplant and cauliflower to use up, too.

    Th- either leftovers if we have enough or baked tilapia, couscous, veg.

    Saturday- undecided...maybe takeout or going out.

    We don't have much of a menu since I never know what will sound good to me from night to night.

    Last night we had homemade mac and cheese, tonight we're having leftovers and tomorrow we're trying these chicken burgers.  They look really yummy:

    Fri: White Chicken Chili, Tortilla Chips & Toppings

    I'm also going to make a yummy Peach Gratin some time this week b/c my Dad gave me a ton of locally grown peaches. Mmm!
