Hey Ladies - Happy (yuck) Monday. What are you cooking this weekend?

Here's my menu, but probably one dish will be cut b/c I think we are heading out of town for the long weekend Thursday instead of Friday if possible . . .

Santa Fe Pizza - I'm copying this from a restaurant we like here: pizza dough topped with cilantro pesto (cilantro, almonds, garlic, a jalapeno, salt/pepper, o/o), ground chorizo sausage, chopped tomatoes, banana peppers, cheddar/jack cheese.

  • Once again I have no idea what I'm cooking this week.  I made cheddar cheese soup and lamb sliders on yesterday.  Our neighbors are bringing over dinner tonight since they know tomorrow is my EDD and DH has been in and out of town due to his mom having another stroke.

    I did want to share this Yogurt-Zucchini Bread recipe with you all.  I made it over the weekend for a housewarming gift and it was yummy. I have so much zucchini that I will probably make another batch into muffins and freeze them individually.  I subbed half the flour for white whole wheat AP flour and the walnuts for pecans.  I added an additional 1/4 cup of zucchini as well.

    thanks, and thanks for the zucch bread recipe! I have a ton of zucchini too, and am always looking for new versions of bread. Plus we have new neighbors, so I should bring over a loaf!

  • Mon- Chicken Fettucini Alfredo, maybe a salad and/or cresent rolls

    Tues- Sweet and Sour Chicken and white rice

    Wed- Penne pasta with tomato cream sauce and sauteed bell peppers and broccoli, maybe a salad and/or cresent rolls

    Thurs- probably leftovers

    Fri- probably leftovers

    I should have leftovers for lunch and 2 dinners because DH is OOT. We are trying to save money or I probably wouldn't cook much. If I don't have enough leftovers I might have grilled cheese and ramen soup at some point.
