Bouncing off Ashnicole's cooking post

Anyone have any no cook recipes?  It is going to be 100 here today (finally!!!) and I don't have AC so I'd rather not even use the stove!

Any recs?  I am sick of grilled chicken (or any meat, really) and salad.  We eat that all the time.

    I like the way you think!  That sounds so yummy!

  • I make this alot and use it diff ways throughout the week. I Have tried it was several diff variations as well.

    It's super healthy to.

    Ingredients:
    3 cups cubed cooked chicken breast
    1 can (15 ounces) black beans, rinsed and drained
    1 medium tomato, seeded and finely chopped (I use a can of diced tomatos)
    1 can (4 ounces) chopped green chilies
    1/2 cup salsa
    1/4 cup finely chopped onion
    1/4 cup finely chopped sweet red pepper (I've used green and it's been fine)
    1 tablespoon lime juice
    1/2 teaspoon ground cumin
    1/2 teaspoon seasoned salt
    1/4 teaspoon garlic powder
    Sliced shoestring style cucumber


    Directions:
    In a large bowl, combine ingredients. Refrigerate until serving. 

    Suggested uses: 

    I will then use it on top of lettace w/ a bit low fat cheese and taco sauce as a salad

    Or as a wrap w/ lettace, cheese, and taco sauce

    If you like sour cream you can add that as well. Lots of ways to use this.  Plus it's always better the next day.
