Share your baked mac & cheese recipe

DS loves mac and cheese, but I've never made baked mac and cheese and want to make it for dinner tonight or tomorrow. Anyone have a good (and easy) recipe they can share? I'd prefer a recipe that doesn't take a ton of ingredients.

  • It's not baked, but this has hidden cauliflower in it and is from "Deceptively Delicious".  I've made this twice in the past two weeks...

    The first time I made it with regular cauliflower, whole milk, (full fat) sharp cheddar and philly cream cheese...it was insane...even dh gobbled it up.  

    I made it yesterday with mild cheddar and neufchatal cream cheese(low fat) and i think it's really bland...dd likes it, though.  I freeze it in small portions for her.

  • This is not what you're looking for probably, but I just have to share because it's funny.

    ILs throw dinner parties for their snotty friends, and one of their most-requested dishes is their mac & cheese.  They say it is a family recipe handed down from the old country, and their friends totally believe it.

    What they really do is get a huge lasagna pan, put five frozen Stouffer's mac & cheese bricks in, and stick it in the oven.  They stir it together once it thaws and add bread crumbs 5 minutes before it's done.  All their friends are now trying to invent complicated recipes for their parties in the hopes of recreating it.

    I am not sure if it counts as baked b/c it is only broiled for a few minutes.  It is low fat ingredients.  I tried this while I was trying to get rid of some baby weight and DH and DS went wild for it.  It is all we make now!

  • You should try crock pot mac and cheese instead. Here's my recipe. It's amazing:

    8 oz boiled elbow mac

    1 package of shredded sharp cheddar cheese

    1/2 stick of butter or margarine

    2 eggs

    1 can of evaporated milk

    1 1/2 cups milk

    seasoned salt and pepper to taste

    Combine macaroni, butter and cheese in crock pot. Add both milks, then add the egg (slightly beaten). Add salt and pepper. Cook on low for three hours or on high for 1 hour and 15 minutes.

    2 c. uncooked macaroni noodles

    1/2 c. margarine

    2 T flour

    1 1/2 c. milk

    1 tsp salt

    1/4 tsp pepper

    1 c. grated cheese

    Cook macaroni.  Melt margarine, add flour and cook, stirring constantly for 2 minutes.  Do not brown.  Stir in milk, salt and pepper.  Cook until smooth (important).  Combine with noodles.  Sprinkle cheese on top.  Bake for 25-30 minutes at 350 degrees. 

  • My Baked Mac recipe has tomatoes.  Seriously so freakin' good, I make it every Friday during Lent (I usually make 1/2 batches..you'll have leftovers)

    cook 1 box elbow macaroni according to decorations and put in a baking dish.  I blend 2 big cans whole peeled tomatoes w/ sugar (in the blender, but I just chop it up...not to a puree).  I don't have a measurement as for the sugar, just add it to taste.   2 big blocks shredded sharp cheddar.

    mix it all together, breadcrumbs on top and a few dollops of margarine/butter.

    bake at 350 about 40-45 mins.
