My husband was just diagnosed as a Type 2 diabetic. I was wondering if anyone has any experience with cooking a low-carb, low fat, low sodium diet (he's also supposed to lower his cholesterol and blood pressure) along with feeding a growing 17-month-old DD who needs all the fat that her daddy doesn't!
DH will be taking diabetes classes from a local hospital, but they don't start for a few weeks. I was surprised, but after 3 days in the hospital, DH was discharged with practically zero information on what he's supposed to eat or even how many carbs per day he's supposed to have.
Any help would be appreciated. TIA
