Pasta salad recipe w/ no dairy or eggs?

Does anyone have a good recipe?  I'm trying to plan the menu for Gavin's birthday party next weekend.  He's allergic to dairy and eggs.

  • My very favorite dressing is:

    1/2 c. olive oil ?
    1/4 c. red wine vinegar ?
    2 cloves garlic, minced ?
    1 tsp. basil ?
    1 tsp. oregano ?
    1/2 tsp. dry mustard ?
    1/4 tsp salt ?
    1/4 tsp pepper

    I usually mix any pasta and veggies I have with the dressing and call it good. It's delicious!!

  • What about doing a pasta or couscous with roasted veggies and a dressing?  Or using a soy cheese, can he eat those?

  • You could use the one that I brought to the GTG and just substitute something non dairy instead of the ranch dressing.

    All it had in it was

    Any type of pasta I used mini bowties, green onions, bacon bits, tomatoes. Just measure to what you feel is necessary. I did one box of pasta, about 6 green onions, 6 roma tomatoes and about half a package of bacon bits.

  • We made one last night that had: Pasta [gemelli], bell peppers, tomatoes diced onion, feta and pesto.  It's our new favorite and so easy.  We often add cucumber or other veggies we have on hand.   Our previous go-to has always been good seasons italian dressing with extra balsamic vinegar, but the pesto was awesome. 

    We've been playing with different pesto recipes, but plain is our favorite [although roasted red pepper does make a pretty good pasta salad too]

  • It's not really a pasta salad, but Trader Joes has a tri color bean and grain mix (it's in a bag near the rice).  I cook that in chicken stock, add some frozen corn, and a can of santa fe style beans and a can of hominey.  Keep all the liquid from the beans. Add avacado, green onions and a side of feta (they add their own so there is no cross contamination)

  • no recipe here but I wanted to ask you about Gavin's allergies... How did you discover them and did the Dr order more testing or did you have to push?  What symptoms did he have before you found out?

     Ryan has been breaking out with a rash on his face just about everyday these days.  It comes on fierce then is gone within an hour.  Yogurt and cottage cheese leave splotches on his chin too.  I'm thinking he's got some allergies, and am worried about the switch to cows milk in the next week or so with his skin reaction to creamy dairy products already.

  • kaskade--love the pesto idea, but petso is unfortunately made with parmesan cheese.

    NancyDrew--We found out that G was allergic to dairy when he was about 3.5 months old.  He had horrible eczema, so the doctor suggested eliminating dairy from my diet to see if it made any difference in his skin.  Within 3 days, his skin was completely clear.  A couple weeks later, Evie spilled a glass of milk on him and he broke out in hives.  I took him back to the pedi, and she sent him for allergy testing to determine whether the allergy was severe enough to warrant prescribing an epi pen.  We did the testing, and it turns out that he's got a severe allergy to both eggs and dairy.  Most kids outgrow their allergies, so we will have him tested again when he's 2 to see whether he's still allergic.  For now, we've got an epi pen and are diligent about reading labels.

    Bright red patches on the cheeks is a telltale sign of allergy.  Definitely insist on testing if you think Ryan's allergic.  It's nice to know either way for peace of mind!

  • Bummer, I forgot most pesto has the parmesan.  I know you can make your own without it, but I always buy the storebought stuff.

    Good luck, maybe the Italian dressing will be your best bet!
