thought I'd share the yummy & easy dinner I'm making today :)

I'm excited that I am finally able to cook again without gagging...and today I am making fajitas.  Not very authentic fajitas, but they are soooo good and make great leftovers, and are pretty healthy, so I thought I'd share...

McCormick makes one of those packs of seasoning for fajitas, which I just throw in a plastic bag with some cut up chicken breast and a little olive oil so it can get all coated.  Then I cook it in a pan...it's so nice cause it's not too spicy, but it has flavor.  I put a little meat in a tortilla with black beans, corn, shredded cheese, and tomatoes...and sour cream.  Yum :)

 When you're done, you can prepare the leftovers in the tortillas, and wrap them in foil, and take them to work the next day cause they reheat really well.  It's one of the few leftovers that we actually eat.

  • Raw meat has not been my friend. So, I have just been throwing everything in the crockpot. Unless I have a SERIOUS craving that requires me to handle meat, I have preferred not to.haha.

    Stove To Stuffing

    2 Cans Cream Of Chicken Soup

    Thin Sliced Chicken Breasts

    Pre-heat oven to 425. Whip up stove top by directions on the box. Line Oven safe pan with stuffing, put chicken breasts on top. Pour Cream of Chicken Soup Over. Bake for 35 Minutes. Voila!

    ***I also buy the frozen "Steam Fresh" Veggies 5 Min in the microwave. Whole meal only takes about 5 minutes of prep time.

    It comes out good, reminds me of thanksgiving, except it's chicken not turkey (obviously). But it's so easy to make you cant beat it!

  • One of my favorite quick and easy dinners is called spicy salsa mac.

    You use elbow noodles, Velveeta cheese, ground beef, and 1 or 2 cups of salsa. 

    Very yummy!!!!

  • I like to use the frozen meal bag for fajitas. Slices of steak, bell peppers, onions, etc... OMGOODNESS, I could eat that (with a healthy squirt of salsa, sour cream, guacamole, and cheese) ALL DAY. Mmm!

    I'd have to modify the OP's recipe to NOT include chicken! I can't handle it.
