I always thought DD would self regulate when it came to self-feeding, but I'm not so sure. We had breakfast and DD was given a handful of cheerios, one scrambled egg, one jumbo strawberry, handful of large blueberries, and 2 oz of juice. All on her tray for her to pick up herself. She still wants more fruit. I don't see how it can all fit in her stomach, but I don't want her to be hungry either? Do you give set portions or do you just continue offering food until they no longer take it?

That's a LOT of food for an 8 month old. At that age, solids are really meant to be a supplement to breastmilk or formula, not as a complete replacement. And yes, kids can definitely overeat solids (fruit is no exception). The problem is that if she fills up on solids, she will not be hungry for bm/formula, which is where she should be getting the majority of her calories and nutrition right now.
Personally, I'd give nurse or give a bottle first, then offer solids.
