So, a co-worker made an amazing chocolate cake for a picnic we had. It was SO fluffy, but still rich...like nothing I have had before! She said it was a box mix, but that she added a good-size zucchini (cleaned and shredded up fine) to the batter before baking!
DH is the "sweets coinsure" and was VERY hesitant to make the cake last night, per my request. Well, he did (with homemade butter cream frosting I might add) and it came out SO well! Even he loved it!
In short...I can count the zucchini in the chocolate cake as a serving of veggies, right? :-)
Re: "Good" Chololate Cake??
WOAH! I MAY have to have DH do that next week!
So the creamcheese counts as a serving of dairy then, right? :-)
I don't think you can count it as a full serving of veggies if it's one zucchini per cake, but it's better than nothing.
My mom also liked to trade out some of the oil for equal parts apple sauce.
