I'm hoping for a little direction for our trip to Vancouver at the end of the month.
We'll have a car, and it will be myself, DH and DS (8 mo).
What part of town should we stay in?
Any hotel recs? (we'd like a 2 BR suite so DS can go to bed and we don't have to be in the dark).
What activities would you recommend?

Go onto tripadvisor.com They have reviews of all the hotels in Vancouver. I use it all the time and only live 1 hour from there.
Try to visit the Aquarium, or Science world. Both places have areas for younger kids and they love the activities. Check the websites to see if there are any events happening too.
If you want to see some trendy shops, go to Granville Island and Robson Avenue. Lots of high end stores and good places to eat.
We go to the Vancouver Art Gallery on Saturdays bec. they have family events in the gallery- colouring, things to touch, etc.
Last- you could google "family activities in Vancouver" and you will get a ton of information.
Not sure about accommodations, but you should definitely spend some time at Stanley Park https://vancouver.ca/Parks/parks/stanley/ and maybe check out Playland (and the PNE if you are here between Aug 21 and Sept 6). https://www.pne.ca
You might also like to check out Granville Island. https://www.granvilleisland.com/
It's also fun to just walk up and down Robson Street (lots of shopping), but I would also agree with pp about Science World.
