NPSR: Cooking frozen veggies

I went to our local outdoor produce market yesterday and bought some freshly chopped frozen veggies.  I bought a bag of mixed veggies--broccoli, red peppers, and snap peas--and a bag of cut green beans with small peeled potatoes.  I'm gonna prepare the green beans tonight but not sure exactly how.  I was thinking of putting them in a pot with some chicken stock and a little butter, salt and pepper.  How do you guys make your frozen veggies?  And how much chicken stock would you recommend--enough to cover or just a bit on the bottom of the pot to simmer?  Any advice and all tips welcomed!  Thanks!

  • I simmer them in about an inch or two of water/broth, then drain and add seasonings.

  • I do as metisca said above, or I steam them in my microwave steamer.  I like my veggies hot but still crispy and toothsome.  Steaming does a good job at this with frozen veggies.
