I never actually feel like cooking dinner anymore...poor DH...he dug through the cupboards last night and found velveeta, beans, canned jalapenos, and Ro-Tel...dumped it in a pan and called it dinner...haha.
Tonight I'm craving hashbrown casserole, though, so I'm going to try to mix that up and put it in the oven so at least DH will have a decent meal even if I don't feel like eating it later!

Ok, this is kind of my made-up-on-the-fly recipe...I have several different variations of this, but this one's my favorite...
32 oz frozen shredded hashbrowns (thawed in microwave) 1 can cream of chicken OR cream of celery soup 1 can cheddar cheese condensed soup 1 small-ish package deli ham, chopped 2 cups shredded cheese (I use colby jack) 8 oz. sour cream
Stir all of the above together in a large bowl and pat into a greased 13x9 baking dish. Bake at 350?F for 40-45 minutes.
You can also add chopped onions to the casserole, and I've sometimes topped it with french fried onions, or corn flakes sauteed in butter. Not exactly the healthiest, but very tasty!!

I am the total all-star of this thread: mac and cheese from the box, which I will be sharing with my DS. DH is working and I just do not feel like cooking or getting something out.
So the hashbrown casserole post made me want tater tot casserole. I'm having DH stop at the store to get ingredients on his way home from work. Mmmm. Hopefully it still sounds good after I make it.

Miso soup with Tofu and Wakame, white rice. Maybe a cucumber salad, but that didn't end well a couple days ago. Am I ever going to stop feeling fatigued? I know that I'm growing a person but man it would be great to get through a whole day without just. conking. out. at the end. At this point when I get home, I have to take at least an hour nap before anything else can happen.
MH got sent to Korea for the rest of the week for work so it's just me. I'm thinking leftovers - either chicken enchiladas or pepperoncini pot roast sandwiches.... but neither sounds that great.
