NBR - Salad Recipes

We are going to a friend's house for dinner and we are supposed to bring a salad to pas.  They are making hamburgers, corn on the cob, and strawberry pie.  Anyone have a good suggestion for a nice salad that I could make to go along with dinner?  I'd love to try something new that I haven't made yet!  Thanks!!

  • My favorite summertime salad is Spinach and Strawberry Salad (recipe from a Paula Deen cookbook). 

    Salad:
    1 package baby spinach
    1 medium cucumber, diced
    1 pint sliced strawberries
    1/4 cup sliced almonds

    Dressing: (put the dressing on right before serving, otherwise it gets soggy)
    1 Tbsp lemon juice
    2 Tbsp white wine vinegar
    1/3 cup sugar
    1 Tbsp vegetable oil
    1 tsp poppy seeds

  • make a homemade pasta salad.  cut up some fresh broccoli, carrots, green onion, black olives, tomatoes (seeded) & toss with cooked rotini noodles & either a red wine vinarette dressing or a zesty italian dressing & then add a touch of red wine vinegar & top with some fresh shredded parmesan cheese.  Yumm O!  LOL

    hot potato salad.

    Bake your potatoes ( I microwave b/c it's quicker & easier).  then in a large mixing bowl shredd your potatoes & a stick of butter with a cheese grater & mix

    Then mix shredded cheese, sour cream, chives & bacon.  put in a casserole dish & heat in the oven on 350 until it bubbles. 

    hashbrown casserole.

    saute some diced onion & bell pepper in some olive oil or butter.  then mix the onion/peppers with a bag of frozen hashbrowns, mix can of cream celery (or cream of mushroom or chk..whatever you have) & a carton of sourcream.  Add shredded cheddar cheese & put into baking dish.  Top with crushed corn flakes.  Then pour 1/2 stick melted butter over the top of cornflakes.  Coer & bake on 375 until it bubbles..about 45min-1 hour.

    Almond Slices

    Cherry Tomatoes

    Brocolli

    For dressing, I like Raspberry Vinaigrette, but definitely wait until right before and you won't need much!

  • I love to make a Strawberry Fields salad...

    Lettuce (I use Romaine and throw in some Spinach)

    Sliced strawberries

    Pecans

    Parmesan cheese

    Croutons

    Chicken (if the salad is going to be our main meal)

    Balsamic Vinagrette

  • I'm such a salad girl...

    Mandarin oranges, cucumber and walnuts in field greens (for the dressing, I use the good seasons container. use olive oil, balsamic vinegar and instead of water, use the syrup/juice from the mandarin oranges container and add some fresh minced garlic to taste)

    pears, feta cheese, cucumber, and walnuts or pine nuts in spinach or field greens and use a raspberry vinaigrette as the dressing

    craisins (cranberry raisins), walnuts, cucumber in field green (can you tell what kind of lettuce i like?) with vidalia onion dressing
