I am FAR from a domestic goddess...but here are a few of our favorite things to cook at home:

make your own pizza night
breakfast for dinner (blueberry pancakes sound wonderful to me right now!)
Thanksgiving-ish foods (stuffing, green been caserole, mashed potatoes)
spaghetti
Greek Salad with warm pita

Tortelleni Soup with Summer Veggies
1 pkg cheese tortelleni
1/2 lb italian sausage sweet or hot- I use hot turkey - remove from casing and crumble - or you can just slice it
Summer squash - green and yellow
Onion
Tomato
Celery
Any other veggies you desire
Garlic
16oz can tomatoes - whole, crushed etc...
4c broth - I used beef
Heat olive oil - add chopped onion and garlic and sausage crumbles/slices - brown. Add in veggies, broth, canned tomatoes. Simmer 20-30 min (I let mine simmer for awhile) Toss in tortelleni in the last 7 minutes. Sprinkle with cheese. Easy and delish!
I make curries a lot, can of lite coconut milk, leftover veg/protein, then a blob of pre-made curry paste. dash of fish sauce, sugar and shred some basil into it. Jasmin rice, voila.
Other standbys are fish tacos, salmon with cilantro lime butter, and ordering out. lol.

Creamy Sausage Penne
Penne Pasta
1lb italian sausage - remove from casing and crumble
Onion
lots of garlic
1 can petite diced tomatos - DRAINED
1 and 1/2 cup heavy cream
Cook pasta. While pasta is cooking - brown sausage with garlic and onion. Add in can of tomatos and heavy cream. Bring to a slow boil, add in cooked pasta, simmer until sauce thickens.
Ditto Pioneer Woman! I have her cookbook, too, but all of the recipes are on her blog, so I don't think buying the book is necessary. Our faves are Penne a la Betsy and Chicken Spaghetti.
Another absolute FAVE of mine is www.annies-eats.com. Her recipes are amazing. She is pretty much my idol, too -- she's a cancer survivor, young mom, DOCTOR, amazing cook, throws incredible parties, takes beautiful pictures, and she's gorgeous to boot. I kind of have a girl crush on her.
Because of her pizza dough recipe, we now have pizza every Friday -- sometimes baked, sometimes grilled, with different toppings and sauces every week. It never gets old.
I'd say about 60% of our recipes come from one of these two sites!
I am by no means Martha Stewart; even though I love her and also get her magazine. But I have started cooking more in the last 2 yrs. I get ALOT of my recipes from Real Simple Magazine, they have really easy and yummy dinners and desserts. It's usually is only a few simple steps and ingrediants. So perfect for me and my lack of skills.
I am super de-duper cheap so I cook a lot.. we eat at home most nights... Some regulars in our rotation:
- Pasta alla mommy (actually my own take of the penne alla betsey by pioneer woman recipe mentioned above) I make it with sauted chunks of chicken instead of shrimp and I don't use onions. Both grown-ups and all 3 kids love it. Especially great will all the fresh basil I've got right now.
- Chicken curry - cook up some cut up chicken in a bunch of minced garlic and a splash of olive oil with a couple tablespoons of madras curry powder, toss in veggies of choice - we like squash, peppers, etc - add a can of light coconut milk, a squirt of honey and a squirt of lime, handful of chopped up basil. Serve with some rice and some mangoes on the side. Yum.
- Chicken gyros. Marinate a few chicken breasts in a little plain yogurt, squirt of lemon, few shakes of oregano, and a good amount of garlic (just needs 20 minutes or so). Grill em up. Chop em up. Serve in warm greek pita with lettuce, tomato, onion, feta, tzaziki... whatever you like! Tzaziki is easy. Grap a little individual cup of plain greek yogurt from the grocery and mix it up with a clove of garlic you mush the heck out of or put through a garlic press, a half a shredded cucumber (scoop the seeds out first), a splash of olive oil, salt & pepper and some dill if you got it but it's not necessary. It's great on the gyros and also great to dip some oven fries in.
- Pasta primavera. Boil pasta. In separate pan saute up lots of veg. (squash, broccoli, tomatoes, etc) in lots of garlic and splash of olive oil. Toss with cooked pasta. Add another little splash of olive oil and sprinkle of parm. Yum.
