Next week I'm hosting Bunko at my house. The host always provides dinner and dessert, and it's always something reasonably nice (not super fancy, but not just a frozen lasagna either!)
I'm struggling because most of our summer meals involve grilling, and DH is the griller (I seriously have never turned it on). Also, it either needs to be make-ahead or oven-baked (not stovetop) since we usually do drinks and apps while dinner is cooking.

Would it be lame to do a "salad supper" - the roasted shrimp salad, maybe my homemade chicken salad, and a spinach salad with strawberries/ pecans/oranges/etc., and some good croissants ?? (Plus app and dessert)
Any other thoughts or suggestions?

I love Bunko! We play once a month w/12 people, so you only have to host it one time a year. The host provides appetizers and desserts. We also give out prizes.
Have fun! Now I can't wait til our next Bunko night.
That's our schedule too, although we fall off a bit over the summer and around the holidays!
