Bunco Ladies: My Lemon Cookie Recipe

Hi Ladies: I will post this on FB tonight (don't have access to it during the day).  But for those that can't wait, here it is:

 (Oh and if you don't have limes or have a ton of lemons, you can always substitute lemon peel in place of the lime peel)

My Low Fat Lemon Lime Tea Cookies

Dough

1/2 cup butter or margarine

3/4 cup granulated sugar

1 tsp. shredded lime peel

1 tsp. baking powder

1/4 tsp. baking soda

1 egg
1/3 cup milk
2-3 teaspoons lemon juice (I like 3 teaspoons for a more ?lemony taste?)
1 3/4 cup all-purpose flour
dash of salt

 

Lemon Lime Glaze

1/4 cup granulated sugar

2 tablespoons lemon juice

2 teaspoons lime peel

Mix 1/4 cup granulated sugar, 2 tablespoons lemon juice, and 2 teaspoons lime peel (I toss in all of the leftover lime peel). Stir occasionally and let set so lemon and lime flavors mix with the sugar. 

Make Lemon Lime Glaze first and set aside.  Make dough.  Cream butter and sugar till fluffy. Add sugar, lime peel, baking powder, baking soda, and salt.  Beat until combined.  Beat in egg, milk, and lemon juice.  Beat in flour slowly. Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheet. Bake at 350? F for 10 to 13 minutes until edges are lightly golden brown.  Remove cookies from baking sheet. Brush with Lemon Lime Glaze.  Let cool and set for about 10 minutes.  Brush with more glaze.  Repeat as desired. 

 

Nutrition Facts: About 50 calories per cookie, 2g total fat.
