  I have chicken out as well (drumsticks). Going to do barbecue chicken on the grill serving it with rice and corn on the cob.

  I am making chicken fajitas tonight. I just season the meat and brown it. then throw onion and bell peppers into the meat and saute. Serve with refried frijoles and totillas. It's simple and good. I have homemade salsa from last night.

  My favorite easy recipe: marinate them in Italian Dressing and then just cook in a skillet or bake in the oven or grill!  It is soooo good!
