he eats well and burps well. He does spit up most of the time and his peditrician says that isn't uncommon. What I can't figure out is why he is so crabby after eating?

Every situation is different. It can be anything from gas, reflux, or intestinal disease.
My 1st was super cranky, ALWAYS crying, spitting up, didn't sleep more than 4 hours EVER. (He was breastfed for 12 mo.) When he started with cow's milk it went to vomiting. He suffered until he was 18 mo. before we knew exactly what caused it. I also nursed my 2nd for 12 mo. and she was about the same, but better, so I didn't think she had any real issues. When she started cow's milk, it came right back out. In the end, they've both been to an allergist and they're allergic to dairy (and breast milk because we're mammals too). But...
that's just my situation. I still can't tell you what it is for your boy, but if the spit-up is more curdled than liquid, I'd get a second opinion.
Ditto the prior post about it potentially being anything. However in my experience whenever she was crabby after eating, it was because her stomach was upset from a food intolerance. I have since cut out dairy and eggs from my diet and we have been cranky free!
