Well sadly my summer is over, so back to planning a weekly menu. Anybody made their's for next week? If so I would love to take a peek, to get me back on track. TIA

Sunday: Cheesy Beef Enchiladas (a recipe I found over on the SAHM board) with a Mexican salad. (I am going to freeze half for later)
Monday: Chicken and veggie curry
Tuesday: Crock pot beef tips over rice (somone posted this recipe on this board earlier in the week and it looked really good!) with sauteed onions, squash and zukes
Wednesday: Out
Thursday: Cheeseburgers on the grill with homeade steak fries and a salad
Friday: Low country boil and blueberry cobbler w/ ice cream
Saturday: Mom and stepdad will be in town, so maybe they will babysit so DH and I can go out on a date.
I feel horrible reading this! You ladies work AND cook these extravagant meals!!????? That is awesome. How do you pull it off?. Here is my typical menu, which should make all of you feel like a million dollars (or June Cleaver):
Monday- leftover turkey meatballs and spaghetti/salad
I'll be eating mostly leftovers from the freezer and one-person dinners Friday through Tuesday, then, I'm leaving Wed. So I'll also give this week's menu.
Sunday: Betty Crocker's Indonesian Peanut Chicken with rice
Monday: crock pot pork chops (put the recipe in the weekly recipe post), mashed potatoes, steamed brocolli and carrots
Tuesday: stir fried beef and veggies with rice
Wednesday: leftovers from Monday
Thursday: Pizza night since DH is getting ready to leave the country tomorrow

We went to the fish market on Sunday so that sort of colored the week:
Sunday - baked chilean sea bass w/ squash
Monday - seared scallops w/ cous cous and green beans
Tuesday - used the left over sea bass to make fish tacos w/ cole slaw (that was goood!!)
Wednesday - hamburger stroganoff w/ noodles and brocolli
Tonight - cheeseburgers on the grill w/ somethng?
Friday - grilled marinated chicken on the grill
Saturday - we'll go out probably

I cooked all Sunday afternoon, and I always make enough for 2 meals. But I'm not as extravagant as some.

We just did next week's menu last night. We do Fri to Thurs for some reason. I have no idea why.
Thurs -- Turkey burgers, salad
Fri -- 5 minute spaghetti (ground meat & spaghetti sauce over noodles), salad, cucumbers
Sat -- grilled redfish, salad, saffron rice
Sun -- MH just got a ravioli maker so he's making spinach/goat cheese ravioli with grilled chicken
Mon -- Grilled fish tacos
Tues -- Shrimp & veggie stir fry over rice
Wed -- Leftover stir fry
Since DH just got a new gas grill for his upcoming birthday...most of my meals include grilling
Monday: Brats with homemade mac and cheese
Tuesday: Wholesome Helper - Beef Stroganoff with green beans
Wednesday: Grilled chicken breast (marinated in bbq sauce & olive oil), with sweet corn and baked sweet potatoes
Thursday: Grilled ranch cheeseburgers (you combine 1 lb of ground beef, 1/2 cup shredded cheddar cheese, and 1/2 ounce ranch dressing powder mix), with tator tots
Friday: Beef soft tacos with mexican rice, cheese dip and chips

I don't have my menu done for next week yet, but this what we had this week. I cooked for 2 hours on Sun while my mom watched DD.
S: baked mac&cheese casserole w/ broccoli,carrots & bacon bits
M: ham ravioli bake
T:grilled pizza sandwhiches
W:green bean, hamburger, hashbrown casserole
Th:stuffed shells
Sun/Mon - Green chile and chicken enchiladas (made a huge pan) with black beans
Tues - Tater Tot Casserole with mixed veggies
Wed - Quesadillas (w/leftover chicken from enchiladas) and salad
Thursday - Baked tilapia, salad and mashed potatoes
Friday - Takeout
DH and I both don't mind leftovers so I try to make food that we can eat for lunch the next day too.
