I'd suck it up and try to use the potty whenever you can even if its not convenient. (I agree that sucks though) but I think it would be super confusing to her if you told her to use a diaper just because you're in line.
She's been potty trained since march- so it's not new. But she isn't very good giving at giving advanced notice. When she says I have to go, she means NOW. That's the part that worries me, if we have to get out of line and find a potty it might be too late! She's usually ok in target and the grocery store, but in those places I know exactly which direction to run in.
I agree- putting her back in diapers might be confusing. I have never been, so I can't speak from experience, but would it be possible to stop by the bathroom and "try" before line for each ride. Also, perhaps keep a map so you can keep track of where the bathrooms are so if she has to go you are close. Also, maybe try the plastic training underwear to prevent any accidents from leaking through to the clothes so you didn't have to worry about changing her whole outfit. Good luck!
Good suggestion re going before you get in line for each ride. You could also try putting her in training pants (as opposed to pull ups) for a few weeks before you go to encourage her to let you know earlier when she needs to go.
We just took our potty trained (day, we're not close to night or naps) DD to Disney. I packed a ton of change of shorts and underpants (and also a few diapers just in case). I figured if we were having a bad enough day with pottying that we blew through all the changes of shorts and underpants we'd resort to diapers and not stress out about the whole thing. We never got to that point but that's where I prepared myself. Seriously we were so hot and sweaty that regardless of what we were drinking none of us were going to the bathroom that often!

We have a small potty from Ikea that we put in a bag and it fits in the basket under the stroller. It's good for emergencies, she can use it in the back of our car, etc.
