NBR: Pudding cake :D

When I was little my mom used to make this pudding cake that was ever so delicious.  I think she got it out of a magazine back in the 80s sometime.

Being pregnant, of course, I had a craving for it although I literally have not had it in years.  I begged her to scan the recipe card and send it my way, which she did.  Once it's done it has to cool in the refrigerator for about two hours (the recipe says one, but two makes it better).  This is sad for me because I would like to eat it now.  For lunch. lol

I'll put the recipe pic here if anyone wants :D  Tastes good with Cool Whip over it, too.

  • Yum! I knew about the jello cake but pudding would be better I think! I have a ton of baking to do today and might just slip this one in too!

  • For everyone thinking of making this, the one tip I would include is to take the part about *quickly* pouring the pudding into the holes seriously - I had no idea that it would start to thicken so fast (probably due to the confectioners sugar) and you want the more watery consistency pudding to seep into the holes in the cake and congeal in the fridge.  Om nom nom nom, juicy cake!

    lol, You're welcome.  One reason I actually wanted to make this aside from the nagging craving was that my husband loves cake... and does not love icing.  The hell is wrong with him?  His birthday is right around the corner and I usually make him a blueberry pie in lieu of a cake, but I think he might like this because the pudding is definitely less sweet than frosting.  Maybe this will only be a one-Tums food instead of a two for you :D

    That sounds delish... I was just wondering out loud to my brother what chocolate cake and butterscotch pudding would taste like.  He accused me of being "so pregnant".  Guilty as charged, I guess :( lol
