Would you take your LO to an indoor public event that requires some level of silence? A symphony is playing in a 28,000 sq. ft. space this weekend. It is a courtyard, but indoor. The event is at 4:00 p.m. and I would love to take DS, but I'm not sure how it would fly. Obviously, if he was screaming or crying or whatever, we would leave, but what if we go and he is just cooing from time to time or trying to "talk" to the people around him?
(I note that I find it very sad that I am sure I had opinions about this before becoming a mommy and I have no clue what said opinions were.)

This. If it were "Kids Day at the Symphony", I would go. Otherwise, people paid money to see the symphony play. And even if he's not screaming, the people around you might not want to hear him coo and "talk". They want to hear the music.
I was frustrated enough when I took my dad to see Star Wars:In Concert - because while it was billed as a family event, the marketing didn't do a good job of explaining that it was a symphony concert with a movie screen showing clips from the movies. And the kids around us were much more interested in hot dogs, pretzels and playing with their lightsabers than actually listening to the music and hearing what C3PO had to say (the actor was narrating). We could barely hear and I was seriously annoyed.
If it is billed as a family event, then its probably ok. I'd still be mindful of my baby's noise level though.
