XP: Some questions if you have worked with fondant

I am going to be doing a trial run for DD's bday cake soon and have a few questions.

1. I know that more dense cakes work better with fondant icing but is there a particular kind you recommend? (I want to just use a boxed cake)

2. I purchased the Wilton's Fondant at Michaels's.  Does it taste bad? Should I add flavouring? If so, what do you recommend?

  • I think fondant taste bad period. I think its more for decoration then eating. I never used a box cake with fondant.. Ive always used my moms homemade recipie.

    If you bought white fondant... just be prepared for messy hands if you plan on dying it. and make sure its not super dry or it'll crack.. BIG time.

  • I used a boxed cake mix (don't remember which kind) and it worked fine.  It was a little soft so I had to be careful but as long as you're patient, it should be ok.

     

    I thought the Wilton's fondant tasted horrible.  I found a simple recipe for Wilton's marshmallow fondant and made that.  It tasted great and looked the same.  Also, before I placed the fondant on the cake, I did a pretty thick layer of buttercream icing so that it would have the more traditional icing in case people didn't like the fondant.

     

    I had to work semi-fast because the warmer the fondant got from my handling it, the more easily it tore and I would have to start all over rolling it back out.  It took quite a bit more coloring than I anticipated to get a color similar to what I was going for.  Good luck!

  • I used the Wilton fondant on my son's cake. It tastes horrible. I know there are recipes out there to make your own marsh mellow fondant, but I was going for easiest. We just picked around it and ate the cake. It was pre-frosted with the butter cream underneath. If you can find the colors you want in the premixed fondant that would be easier as I found mixing the colors to be the hardest. I wanted bright primary colors, pastels would probably be easier. You also can't use flour when you are working with it, I used cornstarch and everything has a dusty glaze on it so I used a spray bottle of water and misted it to make it shiny and bright. I have no idea if that's what is recommended or not. I used the tutorials from Bakerella and Pioneer Woman for help.

  • The Wilton boxed fondant is terrible, hard to work with, and difficult to color - it takes forever because it is so hard, you have to knead the crap out of it.

    I second the Wilton recipe for the marshmallow fondant. I think it is easier to use than the boxed, tastes pretty good, and easy to put on a cake.

    If you're using a boxed cake, I would look into getting the Cake Doctor cookbook. It has some great recipes for making boxed cakes taste like homemade. If you're going through the trouble of making a cake, you might as well make it taste good.

  • I'm sorry to say that Wilton's fondant is nasty beyond nasty. I made marshmallow fondant which was uber easy and actually tasted great. It was easy to work with and easy to dye.
