Easy Meal Ideas

Hi all,

Wondering if anyone has any ideas for easy meals. Having a newborn I am finding it no longer possible to cook like I did before baby Avery arrived! I am looking for some yummy and easy dinner ideas that can be prepared quickly!!

  • I love to cook, but I can't think of too many things off the top of my head. Check out the What's Cooking board on the nest. Some of those girls have great blogs.

    Some easy things are tacos, frozen ravioli w/ marinara, homemade pizza, anything on the grill (chicken, burgers).

  • This time of year is great for fresh veggies. Grill some meat and do a salad or fresh veggies with dip on the side. Quick and easy.

    I find that I cook more (and it's faster) if I stock up on ingredients (freeze meat, buy several bags of frozen veggies, have tortillas and pasta around) to have things on hand. For example, we regularly have stir fry. I try to cut up the meat into small cubes before I freeze it so there's no prep work when I want to cook it. Saute the meat, add a bag of frozen veggies and stir fry sauce of your choice (we make homemade sauce, but catalina dressing or asian sesame ginger dressing work well too). Serve over rice or angel hair noodles.

    Last night we had paninis, squash, and grapes. My husband loves this dinner. Frozen pre-cooked chicken breasts (breaded breast strips are okay) (left over steak is good too, or meatless with thick tomato slices or portabello mushrooms), heated up, sliced into strips. Use french bread or something similar, cut into slices. Put butter and spicy mustard on the inside of one piece of bread, mayo on the inside of the other piece. Place chicken, cheese (pepper jack is great), and any other ingredients you want (we sauteed peppers and onions last night) inside the sandwich. (So butter/ mayo/ mustard are on the inside of the sandwich, the outside has nothing on it.) Heat on George Foreman grill or in a pan, just until cheese is melted. Yum! And it takes less than 10 minutes total to make. Serve with any veggie and/or fruit as a side.

    Also, I always try to make enough for left overs so I can cook once and we can get two meals out of it.

    Have you ever checked out 365 crockpot? I've made some pretty decent recipes on there including baked penne (I modified it to suit my taste), chicken enchiladas in the crockpot, french dip sammies (rump roast, zesty italian dry mix,onions, bay leaf, beef stock, seasoning) and let it go all day for hoagie buns and provolone...these are things you can prep the night before, throwing it all in and have a nice smelling house and dinner (and not using that oven with the humidity we have been having!)
